So, the other night, I was checking out
an old friend's blog - where she mentioned
a blog she'd been enjoying lately. So I clicked and found
an awesome looking recipe for an asparagus tart.
I had been planning to scramble some eggs and saute some asparagus for dinner (so glamorous, right?) But divine providence clearly intervened.
I had to adjust the recipe a bit. I didn't have puffed pastry hanging around in the freezer, so I made an almond flour biscuit. Atop the biscuit, I spread mascarpone cheese, roasted garlic, and an egg. Then I laid in the asparagus, and sprinkled on fresh parsley and pine nuts.
It was an excellent dinner. Thank you blog world!
